Simple pleasures!




A family favourite in this house are these little muffins.
It's a recipe that we alter weekly, depending on what's in the house.

This week it was raspberries (frozen variety sadly!) But we have made pear/cinnamon, carob buds, carrot, blueberry, mixed spice, apple, etc etc.........options are endless

1/2 cup vegetable oil
1/3 cup caster sugar
1 egg
1/2 cup plain flour (I use wholemeal)
1/2 cup s/r flour (again I use wholemeal)

Whisk oil, sugar and egg together in medium bowl.
Add flours (and all other ingredients at this time, eg fruit, spice etc)
Stir until just combined. Place spoon fulls into muffin tin and sprinkle with a little extra sugar (optional) and bake for 15 min.


So easy, so yummy and perfect next to a cup of tea or in the lunchbox!

  2. i LOVE muffins. I make them many times a week, using whatever fruit is getting a bit old (most often banana, apple or carrot). sometimes i base them on baby's leftover breakfast...i hate to waste it and it makes a good base.

    I think my favourite is apple and mixed spice - especially straight outta the oven! And with sweet fruit ones i sometimes omit sugar so bub can go wild with them without going wild.

    These ones look especially yum.
